makes 8 servingsCore squash, don't break skins. Heat 1/2 c oil and saute squash over medium heat, turning often until they are cooked on all sides. Remove from oil and place on paper towel covered plate to drain and cool. To oil, add onion and garlic. Saute over medium heat for a few moments.
