What Are The Ingredients For Hoppin' John w/Sausage and Greens Recipe?The ingredients for Hoppin' John w/Sausage and Greens are: 1 pound smoked sausage, sliced3 slices bacon, chopped 1 large onion, chopped 4 cloves garlic, more or less to taste, chopped 1 tbsp butter 1 cup rice 1 pound dry black eyed peas, soaked overnight 4 cups chicken broth 2 bay leaves 1 (10.5-ounce) can chopped tomatoes and chiles (Rotel) 1 bunch of collard greens or kale, chopped 2 stalks celery, chopped 1/2 teaspoon ground thyme 1/2 teaspoon ground cumin 1/2 teaspoon kosher salt 1/4 teaspoon black pepper How Do I Make Hoppin' John w/Sausage and Greens?Here is how you make Hoppin' John w/Sausage and Greens: Makes 10 servings.Soak black-eyed peas for about six hours, discard the soaking liquid and then just cover in fresh water.In a six-quart Dutch oven, saute the onion and garlic with the bacon and sausage over medium heat. When the meat is browned and the onions are translucent or lightly caramelized, remove. Don't drain the bacon grease.Add the butter and rice and stir until coated. Continue toasting rice, stirring constantly, 3-5 minutes "until you smell nuts." Remove the rice and set aside.Return bacon, onions and sausage to the pot and add the peas, broth and tomatoes (Rotel) with the bay leaves and a bit of salt and pepper.
