Here is how you make Simple Lentils with Andouille Sausage:

Fill a 3-quart saucepan about half full of water and bring to a boil. Do not salt. Add lentils and cook about 30 minutes until they are just done, but still have some texture to them. No mush! Drain well and set aside.Slice and cook the sausage in the same pan. If it's smoked, it just needs to be warmed through, if not, it'll take longer.. If you keep the heat low, you should be able to do this without adding extra oil and may render some more fat from the sausage. Pour in the Madeira sauce and allow to reduce a bit more, about 3-4 minutes.Add the lentils to the sausage. Stir in paprika and salt to taste. Toss to combine. Serve warm.Madeira Sauce:Heat 1-1.5 tbsp of olive oil in a saucepan over medium heat. Add the shallots, garlic, bay, peppercorns, and thyme. Saute for 5-6 minutes, until the shallots and garlic have softened, but not burned. Pour in the madeira. Allow to reduce until thick and sticky. Stir in the honey, then the chicken stock.Allow to reduce at a simmer for 5-6 minutes, then strain.Number of Servings: 6
