I basically turned a rice and beans (w/smoked sausage) recipe into one a little more paleo/primal friendly. It would work well, or better, with kidney beans or you can skip the beans completely (up the veggie content if you do). Start the quinoa cooking in another pan (bring to a boil and then simmer until all water is absorbed).2. Slice the smoked sausage and toss in a hot pan; brown on each side for the best taste. Add in the onions and bell peppers, cook until soft. Add the tomatoes, beans and spices. Simmer until the quinoa is done.3. Add the quinoa to pan, one scoop at a time and stir in.
