Set aside while preparing the rest of the dish.Pre-heat the oven to 300 F. Slice Sausage into 1/2 - 3/4 inch thick diagonal slices. Fry in a non-stick pan over medium-high heat for 5 minutes on each side. Remove from heat and set aside.Chop Fresh basil into rough leaves; 1' by 1' pieces will do fine.Drain the Fire Roasted Red Peppers. Remove any seeds that may still exist. Slice into large chunks, about 1.5 inch thick, and the full length of the pepper. Slice the cheese into somewhat thick slices (1/8 - 1/4 inch should be fine). Drizzle the Olive Oil and garlic mixture into the bottom of a 9' by 13' baking pan. Lay the sliced cheese over top. Spread out the Peppers evenly over the cheese. Place the cooked Sausage over the cheese.
