This is a variation on a recipe I saw on this site for breakfast suasage but I have made several changes that I think replicate the taste of regular breakfast sausage and reduces the sodium. One trick is to make sure the ground sausage is not made from pork that has 8-12% salt solution added to it. Ground sausage does not normally carry nutritional information. Ask the butcher for a cut that is lean and has no salt solution added if possible. Ground turkey can be used, but again, read labels carefully to see if salt solution was added. Cut a piece of aluminum foil large enough to cover bottom of 8X 8 shallow pan and also fold over to seal sausage. Spray foil upper surface with pam. Press sausage into foil/pan about one inch thick. Fold foil corners in to completely seal or leave small opening for meat thermometer. Bake at 350 degrees about 20-30 minutes or until 170 internal temperature. Remove and drain and cut into links. For added touch, place 1 table spoon of oil in nonstick pan, heat to high and pour out most oil and then place hole sausage patty in pan to brown for one minute on both sides. Links can be cut and browned in same way.
