This particular blend of ingredients makes a really unique sausage that is found only in Northern Italy and in the Upper Peninsula of Michigan. Use it in spaghetti sauce, or make patties for sandwiches...or whenever you want an Italian flair! In this recipe I did use a combination of ground pork and ground turkey to cut down on fat content. Using these measurements I had about 5 lb. of sausage. Makes 5 1-pound servings.

3.6 lb Pork, fresh, loin, top loin (chops), boneless, separable lean and fat, raw
16 oz Turkey, Ground turkey, 93% lean
0.75 tsp Black Pepper, ground
4.5 tsp Kosher Salt
0.4 tsp Allspice
0.4 tsp Nutmeg, ground
0.4 tsp Cinnamon, ground
6 fl oz Red Wine
4.5 tsp (C) Garlic, minced, 1 tsp


How Do I Make Cudighi ("Yooper" Sausage)?

Here is how you make Cudighi ("Yooper" Sausage):

Have the pork coarse-ground (don't trim the fat)...I ground it myself, using coarse grind plate the first time and the second time I used the smaller grinding plate. Mix together salt, pepper, cinnamon, nutmeg and allspice. Place ground meats in a heavy duty mixer to work everything in. (You can also mix it with your impeccably clean hands). In a small saucepan combine wine, a cinnamon stick, garlic and 1 clove. Bring to a boil and boil the mixture for 5 min. Remove from heat and let the mixture cool completely. (Be sure to use a good red table wine, I used Bolla Chianti). Strain the mixture reserving the liquid and work liquid into the meat. Let the meat season in the refrigerator for 2-3 days. At this point the meat can be made into links, patties or left in bulk and frozen if desired. **I used about 1 tsp. ground cinnamon and 1/4 tsp. of ground cloves as I did not have the whole spices. If you use ground spices you don't have to strain the liquid. I also did not strain out the garlic).Serving Size:?Makes 5 1-lb. servings/packages
