3 Tablespoons coarse ground pepper

Here is how you make Smoked Chuckie:

Coat both sides of the roast with olive oil.Rub coarse salt into both sides of roast.Rub the coarse pepper into both sides. Don't skimp on either!Let set for at least 30 minutes or refrigerate overnight.Let roast come to room temperature.Light smoker or set up grill for indirect grilling and preheat to 275F.Place roast on cooking surface. Cook until temperature reaches 165F.Remove roast and wrap in 2 layers of heavy foil. Add apple juice and seal.Place back on grill. Cook until the roast is at 205-210F.Remove from heat and place in a cooler filled with towels. Let sit for 2 hours.Place on a plate, unwrap, and pull meat with 2 forks.
