10 oz package Spinach Cheese Tortellini Soup
10 oz bag of fresh spinach
1/2 6 oz can tomato paste
4 fresh tomatoes deskinned and diced or one can diced tomatoes.
1 medium onion
2 tsp minced fresh garlic
4 cups chicken broth
3 tbl fresh basil or 3/4 tsp dried
Salt to taste
Pepper to taste

Can add a sprinkle of fresh red pepper and Parm cheese for garnish. (Neither included in calorie count)

Saute sausage, onion, and garlic until done in a soup pot. Add broth, tomatoes (1 can diced or 4 fresh medium tomatoes diced), tomato paste, and spices. Bring to a boil and cook about 5-10 minutes.
