1 lb. Italian sausage
1 coarsely-chopped onion
1 heaping tsp. chopped garlic
3 cans chicken broth
1 cup water
1 can crushed tomatoes
1 cup thinly-sliced carrots
1 1/2 cup sliced zucchini
1 1/2 tsp. Italian seasoning
3 cups cheese tortellini

Here is how you make Italian Soup with Tortellini:

Brown sausage in oil over medium heat. Remove sausage. Cook onion and garlic in same pan. Add 1 tbsp. oil, if needed, and cook until they are tender. Add cooked sausage back to pan. Next, add broth, water, tomatoes, carrots and seasoning. Bring to a boil. Reduce heat. Simmer 30 minutes. Skim any fat from soup. Stir in zucchini and tortellini; simmer for 20 minutes.
