1 tsp. Cumin
1 bay leaf
12 cups water

Here is how you make Beefy vegtable soup:

Cube meat and remove extra fat - season with salt and pepper. Brown in two batches with 1/2 olive oil in dutch oven or heavy stock pot. Add Thyme when almost done browning. Set meat aside and saute onion and garlic until onions are soft. Stir in thyme, bay leaf and cumin - cook for 1 minute and remove from heat. Pull out garlic and dice - add onions, seasoning and garlic to meat. Add 12 cups hot water and boullioun. bring to a boil - reduce to simmer, cover and cook slowly about 4 hours. Add vegtables and adjust seasonings. Cook until meat is tender about one more hour.
