1 tbsp. Olive oil
3 cloves Garlic, minced or pressed
3 oz. Prosciutto, cut into thin strips
1 Egg Yolk
1/4 cup Parmesan, grated
1/2 cup Mozzarella Made w/ 2% Milk, shredded
3 tbsp. Basil, cut into thin strips
2 Plum Tomatoes, chopped

Here is how you make Spaghetti with Asparagus, Mozzarella, and Prosciutto:

1. Bring a large pot of water to boil.2. While waiting for the water to boil, trim the aparagus, mince the garlic, and cut up the basil and tomatoes.3. When the water boils, add the asparagus and cook until crisp tender, about 2 to 3 minutes. With a slotted spoon, remove asparagus from boiling water to a bowl of ice water to cool and stop the cooking. 4. Return the water in the pot to a boil, adding additional water, if necessary. Add the pasta and cook until al dente. 5. When the asparagus is cool, strain, cut asparagus into 1-inch pieces, and set aside. 6. Just before the pasta is done, heat the oil in a large, heavy skillet over medium heat. Add the garlic and saute until fragrant, about 20 seconds. Add asparagus and prosciutto to the skillet. Stir and season with salt and pepper, to taste. 7. Drain the pasta, reserving 1/2 cup of the cooking liquid. Whisk the egg yolk into the cooking liquid. 8. Add the pasta to the pan, and then add the egg yolk/water mixture and parmesan. Toss to coat. 9.
