500g whole wheat spaghetti
500g 90-95% fat free ground beef
2 large celery stalks, finely diced
2 large carrots, finely diced
1 large onion, finely diced
2 tablepoons olive oil
2 x 400g tinned tomatoes (or 750ml bottle of passata)
2 teaspoons ground (dried) Italian herbs (eg oregano, basil, thyme)
Approximalely 1 cup water
2-3 tablepoons tomato paste
1 teaspoon unsalted butter (optional included in this calculation)
Grated parmesan cheese (optional - add separate food entry)


How Do I Make Spaghetti Bolognaisse?

Here is how you make Spaghetti Bolognaisse:

Prepare vegetables by hand or in the food processor.Boil spaghetti in a big pot of boiling water (according to manufacturer's isntructions) with a little salt but do not add oil.Heat 1 tablepoon of water in a frypan on medium heat, preferably non-stick. 'Fry' 1/4 of the meat. Remove meat to a large bowl. Deglaze the pan with a little water (eg 1 tblspn), scraping all the meat bits and add meat juices to meat. Repeat for three more batches of meat. Heat 1-2 teaspoons of olive oil and fry batches of celery and carrot, removing cooked vegetables to large bowl. Deglaze after each batch with a little water, adding the bits to the bowl. Add a little more of the oil, if needed. Last of all, fry onion in a little butter and oil for extra flavour. Deglaze with tinned tomatoes (or passata). Add cooked vegetables and meat back into the pan. Squash the tinned tomatoes with the back of a spoon. Add 2 to 3 flat tablespoons of tomato paste for more colour. Simmer for 10 minutes or longer until pasta ready. Drain pasta but leave with a little water clinging.Serve pasta, sauce and cheese in separate bowls, accompanied by a fresh UNDRESSED salad or plate of crunchy uncooked vegetables (such as carrots, cucumber, red peppers, green beans).Let the children serve themselves and you will be surprised at how much vegetable they ingest!!Number of Servings: 6Recipe submitted by SparkPeople user HOVELFREE.
