What Are The Ingredients For Leftover Spaghetti Frittata Recipe? The ingredients for Leftover Spaghetti Frittata are: 4 oz ham, cut in bite size pieces1 large onion, diced 2 cups frozen mixed vegetables (I used Birds Eye Classic) 8 oz COOKED spaghetti (nutrition facts calculated with Ronzoni Smart Taste thin spag) 4 large eggs 1/4 cup 2% milk salt & pepper, other spices to taste How Do I Make Leftover Spaghetti Frittata? Here is how you make Leftover Spaghetti Frittata: Makes 6 servings, sliced in the skillet like a pizza. I use a 12" skillet, but I believe a 10" will work.Dice the ham and onion, start cooking over medium heat in a non-stick skillet coated with cooking spray. Season to taste...I can't cook without garlic pepper and regular Mrs. Dash! (I didn't add any salt.) Add the mixed vegetables and stir with spatula. When all signs of frost are gone, add the cooked spaghetti, folding into the other ingredients. Cook until heated through (my spaghetti had been in the refrigerator, but it didn't take very long).Whip eggs with the milk and pour as evenly as possible over the spaghetti mixture. Ideally I would cover this with a lid and let cook with as little stirring as possible, but I don't have a lid big enough for my 12" skillet. I let the egg cook 2-3 minutes, then gently turned the mixture a little to get all the egg cooked through. Simply watch it until the egg is completely cooked.I know it's probably not Emily Post approved, but I simply put the skillet on the table and serve it from there! Serving dishes are over-rated! :-)Number of Servings: 6Recipe submitted by SparkPeople user ROKERSHNER.What's The Nutritional Info For Leftover Spaghetti Frittata? The nutritional information for Leftover Spaghetti Frittata is:
