Italian bread crumbs Vegetable mixture: 1 medium carrot 1/2 large onion 6 cloves garlic 1 handful fresh basil 1 handful fresh parsley 3 T olive oil 1 t. salt 1 t. black pepper 1 T crushed red pepper flakes How Do I Make Lightened up "sinfully divine" spaghetti and meatballs?Here is how you make Lightened up "sinfully divine" spaghetti and meatballs: Bake spaghetti squash (see instructions below).While squash is cooking, prepare meatballs.1. In a large bowl combine ground beef and turkey. Set aside.2. Use a food processor to chop the cheese very finely and add this to the meat mixture.3. In a food processor start vegetable mixture - one medium size carrot, 1/2 large onion, six cloves garlic, one large handful each basil and flat leaf parsley.4. Heat three tablespoons of olive oil in a medium size pan over medium/high heat. To the meat mixture, add one beaten egg, 3/4 cup Italian bread crumbs, and mix to incorporate all the ingredients and form about 2-3 inch balls.7. Bake on foil-lined baking sheet at 375 degrees for 30-45 minutes, until cooked through (turn halfway through baking).7. Add the pasta sauce to the reserved vegetable mixture and heat through. Add cooked meatballs.8. Prepare pasta according to directions. After draining, combine with prepared spaghetti squash.To prepare spaghetti squash:Bake spaghetti squash on a cookie sheet at 350 degrees for about 45 minutes (until a knife can be inserted easily). Remove from oven when done and cool enough to handle. Cut in half and scrape out "spaghetti" strands with a fork.
