Pam cooking Spray
1 Cup mushrooms, chopped
1 Cup yellow onion, diced
2 tsp crushed garlic
1/2 tsp Italian seasoning
salt and Pepper to taste
Fresh spinach, slightly chopped, 4-5 cups
1 cup diced lean ham
5 med eggs
5 med egg whites
1 cup 1% milk
1/4 tsp ground nutmeg
1/2 cup crumbled feta cheese


How Do I Make Spinach, Ham and Feta Crustless Quiche?

Here is how you make Spinach, Ham and Feta Crustless Quiche:

Preheat oven to 400 degrees. Spray pie plate or cake pan with cooking spray. Coat large skillet with cooking spray. Turn heat onto Med-High. Add onion for 3 minutes. Add garlic and cook an additional two minutes. Add mushrooms, spinach, ham, Italian seasoning, Cajun seasoning, salt and pepper. Cook mixture until mushrooms and spinach are wilted and onions are translucent. Spread mixture on the bottom of prepared plate. Cover with feta. In a large bowl whisk together eggs, egg whites, milk and nutmeg. Season with audio all salt and pepper if desired. Pour egg mixture over the top and puch down any ingredients not covered by egg. Bake uncovered until set and golden brown, about 40 minutes. Let quiche stand about 10-15 minutes, then slice into 6 pieces and serve.
