Mix all ingredients EXCEPT ricotta and spinach in large bowl. Lightly spray a deep casserole dish with cooking spray or use a non-stick casserole dish. Place one layer of meatloaf mixture into bottom of dish. Spread 1/2 of the ricotta cheese and top with half of the spinach. Add another layer of meatloaf mixture, repeat layering the remaining ricotta and spinach. Top with remaining meatloaf mixtures.Preheat oven to 350 degrees and bake 2 - 2-1/2 hours until center reaches 155 degrees (time will vary based on depth of cooking dish and can be significantly reduced by using a larger dish with thinner layers). Remove and let sit for at least 10 minutes (center temperature will rise to 160 - 165 F).Drain off juices.
