1/2 cup Broccoli, fresh, chopped
Spinach, fresh, 1 cup
1/2 cup Zucchini squash, chopped
1/2Mushrooms, fresh, pieces or slices
Salt, 1 tsp
2 tsp Italian seasoning


12 oz Cottage Cheese, 2% Milkfat,
Egg, fresh, 1 large
1/4 cup Parmesan Cheese, grated,
1 tbsp Parsley, dried,
1/2 tsp Oregano, ground,
1/4 tsp Basil,
9 Lasagna Noodles, 8 oz cooked, rinsed and drained
2 cups (8oz) Mozzarella Cheese, part skim milk
2 cups spinach


How Do I Make Vegetarian Spinach Lazagne?

Here is how you make Vegetarian Spinach Lazagne:

Pre heat oven to 350. Grease a 9 x 13 pan.For the sauce, in pan add 1/4 cup water and fresh vegetables. Saute' until tender. Remove from pan. Let cool. When cool add to blender or food processor and puree. Next in pan, saute' garlic and onion in 1/4 cup of water. When soft add tomato sauce, tomatoes and seasonings. Add veggie puree. Bring to a simmer. Cover and simmer for 15 min.While waiting for sauce, in a bowl, combine the cottage cheese, egg, Parmesan cheese, parsley, oregano, and basil. In a greased 9x13 baking dish, layer a third of the noodles, sauce, fresh spinach, cottage cheese mixture and mozzarella cheese. Repeat layers. Cover and bake at 350 for 30 min; uncover and bake 15-20 min longer or until bubbly. Let stand for 5 min before cutting.
