Grease a 9 x 13 pan.For the sauce, in pan add 1/4 cup water and fresh vegetables. Saute' until tender. Remove from pan. Let cool. When cool add to blender or food processor and puree. Next in pan, saute' garlic and onion in 1/4 cup of water. When soft add tomato sauce, tomatoes and seasonings. Add veggie puree. Bring to a simmer. Cover and simmer for 15 min.While waiting for sauce, in a bowl, combine the cottage cheese, egg, Parmesan cheese, parsley, oregano, and basil. In a greased 9x13 baking dish, layer a third of the noodles, sauce, fresh spinach, cottage cheese mixture and mozzarella cheese. Repeat layers.
