1 Whole Butternut Squash
1 Bunch Fresh Sage (can use dry)
1 Small Onion, Sliced
Fresh Parmesan Cheese, garnish
Salt and Pepper, as desired

How Do I Make Butternut Squash Penne?

Here is how you make Butternut Squash Penne:

Preheat oven to 375 degrees. Cut the squash in half lengthwise and place on a baking sheet flesh side down, skin up. Let bake until you can pierce easily with a fork. Dont overcook or it with get mushy when you add it to the pasta. When finished, peel the skin off and cut squash into bite sized cubes.Meanwhile, boil pasta according to directions.In large skillet, add uncooked turkey sausage cut into circles using pan spray or olive oil. Add onion strips halfway through cooking the turkey sausage. When fully cooked, add squash and toss around to incorporate. Sprinkle mixture with salt, pepper, and sage.
