In a different pan, use remaining butter and flour to make a roux. Set aside. While scallion mixture is sauteeing, cube steak into small pieces and remove fat. Also chop okra into small pieces.Once scallion mixture is sauteed and onions are clear, add celery, and sautee another two minutes. Then add steak and brown in mixture. Add okra and sautee another 5 minutes. (Okra should secrete a slightly slimy texture, this is normal. Do not wash okra to get rid of this!)Once mixture is sauteed, add water (approximately ten cups maybe up to 15). In a large stock pot the mixture should come about three to four inches up. You want the water to cover the mixture and a few more inches. Heat soup mixture to boiling, add spices, boullion, and canned tomatoes. Cook 10 minutes, then add roux mixture. Continue to cook gumbo until meat is tender and celery is translucent and soft. Season to taste with additional spices... it should taste spicy... once gumbo is done, place in a bowl and serve under rice (your choice). The rice should soften the flavor of the gumbo!Serving Size: 1 bowl (makes approximately 16 bowls)Number of Servings: 16Recipe submitted by SparkPeople user HEILH0UND.What's The Nutritional Info For Steak Gumbo? The nutritional information for Steak Gumbo is:
