Pat both sides of each steak with the coffee rub and let them sit for 30 minutes. (Cooking cold meat makes it less tender.) While you're waiting, make the compound sage butter. Use a small spoon or spatula to mix the butter and sage leaves together in a small bowl, then refrigerate. Grill at 325 degrees or pan-sear them on medium heat until it reaches your preferred level of doneness. Remove the steaks form the heat and let them rest about five minutes.
