1/2 C low sodium beef broth
4 roma tomatoes, diced
2 chipotle chile peppers (canned in adobo sauce, don't add sauce)
2 medium onions, chopped
2 bell peppers (or 10 mini sweet peppers), sliced
2 Tbsp. garlic, minced
1 Tbsp. cumin
2 tsp. paprika
1 jalapeno, chopped

Here is how you make Cuban Flank Steak:

1. Season flank steak with salt and pepper.2. Sear steak on all sides in a skillet sprayed with cooking spray, over medium heat3. Place steak in slow cooker.4. Deglaze with beef broth with 1/4 C of broth5. Add onion, garlic, and peppers. Saute for 4-5 minutes.6. Add tomatoes and spices. Mix, and remove from heat. Place in a blender or food processor, add the other 1/4 C beef broth, and blend/process until smooth.7. Pour sauce into crock pot, and cook on high heat for 4 hours (or low 6-8 hours) until steak is tender enough to shred.8. Shred steak, and return to sauce.
