Peel potatoes and cut into quarters. Place in sauce pan and cover with water. If desired, add 4 peeled whole cloves of garlic. Bring water to a boil, and cover. Simmer potatoes for about 15 minutes, or until tender.While potatoes are simmering, wash and slice the mushrooms and place in a small saucepan. Reserve ? cup of the beef broth. Pour the remaining broth over mushrooms and bring to a simmer, and gently cook for about 10 to 15 minutes, until mushrooms are tender.Divide 1 lb ground beef into 6 patties, approximately ? inch thick. Spray broiler pan with nonstick spray. Place patties under broiler, about 6 inches below heating element. Broil for approximately 6 minutes on each side, until cooked through and lightly browned.Drain water from potatoes, and add salt and pepper to taste. Pour in ? to ? cup chicken broth as you mash the potatoes.Add one Tbsp of cornstarch to reserved beef broth and stir til completely combined.
