What Are The Ingredients For Baggins Stew Recipe?

The ingredients for Baggins Stew are:

1 lb of cubed beef (preferably the kind already cut into chunks and labelled for stew, though other cuts work just as well)
1 very large carrot or 3 skinnier ones
3-5 small red potatoes, skinned
1/2 large onion
2 garlic cloves
2 tbsp olive oil
dash of salt
sprinkle of ground coriander

How Do I Make Baggins Stew?

Here is how you make Baggins Stew:

Cut carrots and potatoes into rough hunks and add to a pot of boiling water. This doesn't need to be pretty or finely cut; the idea is to get the veggies a bit more tender than raw, but still with that lovely crunch that lets you know they're fresh. In a pan, add the olive oil and heat over medium temperature.Add the garlic cloves, minced, and the onion, also minced. Let these cook until translucent and smelling wonderful.Add the beef cubes and turn the pan mixture periodically until the beef is starting to brown. Drain most of the water from the boiling pot of potatoes and carrots. This isn't an exact science, you just want to get *most* of the water out. Once you have done this, pour the entire contents of the pot into the pan, remaining water and all. Sprinkle with ground coriander and maybe another spice that you feel would go well.Let it cook for about 10-20 minutes, depending on how done you want your beef to be. I prefer it medium-medium rare.Makes 4 servings of a good bowl size.Number of Servings: 4Recipe submitted by SparkPeople user YEASRSLY.
