Cut the pork into chunks. Season the pork with salt & pepper. Heat a 2qt sauce pot over high heat add the oil & pork. Cook on high until the pork is brown all over but still raw in the center. Remove pork from pan. Place pan back on the burner over medium heat, add onions, celery, carrots & garlic; cook for 5 mins. Add the enchilada sauce & stock and bring to simmer.
