2 lb stew beef, cut into bite-sized pieces
2 medium carrots, cut into 1/2 inch rounds
1 sweet onion, diced
1 medium green pepper, diced

2 tsp caraway seed
4 tbsp paprika
1 can (5.5 oz) tomato paste
6 cups vegetable stock
2 cups water
4 cups cubed sweet potato
1/4 tsp salt
1/2 tsp black pepper

Here is how you make Hungarian Stew:

In a non-stick skillet, brown all sides of beef. Set aside.In a large pot, add all of the vegetables other than the sweet potatoes, stir well, and cook for 10 minutes, adding a little water as needed. Add the paprika and caraway seeds and mix well. Add in the stew beef. Cook for another 5 minutes. Pour in the tomato paste, vegetable broth and water, mix well, and bring to a boil. Turn the heat down so that the stew is just at a simmer and cook uncovered for several hours.Add the diced sweet potatoes and cook for another 1 to 1 1/2 hours. Season with salt and pepper. Add additional water as needed.Serving Size:?Makes 12 half-cup servings
