1 tbsp olive oil
1 lb lamb, diced and trimmed of excess fat
1 onion diced
4 cloves of garlic, minced
1/4 c four
8 oz Guinness Draught
2 c beef broth
2 c water
2 bay leaves
1 rosemary stalk
4 small potatoes peeled and diced
2 medium turnips peeled and diced
4 carrots peeled and diced
1 c frozen peas


How Do I Make Lamb and Guiness Stew?

Here is how you make Lamb and Guiness Stew:

Heat olive oil over medium in a large pot that covers. Add lamb in batches to brown. Don't crowd the pot or the lamb won't brown properly. Remove lamb and add onions. Saut?e until translucent. Add garlic and saut?e until fragrant. Add tomato paste and cook for one minute. Add lamb and cook for another minute. Add flour and stir until lamb is coated. Cook for one minute. Add bay leaves, rosemary, Guinness, beef broth and water. Cover and simmer for an hour and 20 minutes. Add potatoes, turnips, and carrots and continue simmering for 30 to 40 minutes. Add peas and warm through. Remove bay leaves and rosemary and serve with crusty bread or Irish soda bread.
