5 C FF Chicken Broth
1 C Dried Lentils
1/2 C Chopped Carrot
2 Bay Leaves
3 C Chopped Spinach or Swiss Chard
1.5 C Chopped potato
1 C Chopped Smoked Ham
1 14.5 oz can diced tomatoes, drained
1 Tsp dried basil
1/2 Tsp dried thyme
1/2 Tsp black pepper

Here is how you make Lentil Stew w/Ham and Greens:

Makes 4 1&3/4 cup servingsHeat oil in dutch oven over med-high heat. Add onion and garlic, saute 5 minutes. Add broth, lentils, carrot and bay leaves, bring to a boil, partially cover, reduce heat, simmer 20 minutes. Add spinach or swiss chard, potato, ham, bring to a boil, reduce heat and simmer 15 minutes. Stir in tomatoes, basil, thyme and pepper and simmer 10 minutes.
