Re-heat cubed meatloaf in small amount of low-fat cooking spray, add onions and a dash of water. Cook until onions begin to soften, add potatoes and 1 cup of water. Simmer for ten minutes, add broth and more water if necessary. Any seasonings can be used, we like rosemary, cracked pepper and a very small amount of Lea & Perrins.Once the potatoes have nearly cooked through, add the peas & carrots.
