This is a yummy variation on a dish my sister used to prepare. She makes it with lots of salt and with either steak or chicken strips. I used low fat content ground beef. you could also use ground turkey if you choose. Chop Garlic roughly. Cut peppers into thin strips. Set all veggies aside.Brown ground beef in large sautee pan. (pan should have a lid) Remove excess fat, leaving just a few drops at the bottom of the pan, remove meat to a bowl on the side.Throw veggie mix into pan, cover. On low heat, allow to simmer, stirring occasionally.Chop Tomatoes into chunks. peel and De-pit avocado, slice into wedges.When onions and peppers are nice and cooked (they will mostly be cooking in their own steam), add meat back in and tomatoes.Warm Tortillas. (I did 2 at a time in the microwave for 20 seconds)Serve on a plate with 2 tortillas and approximately an ounce of avocado, arranged as you please. I usually supply forks with this meal, but rarely use them.
