1 onion medium, chopped finely
2 can chick peas drained
2 can tomatoes
1 cup water
1 tsp cumin (ground)
2 tsp thyme
1 bag baby leaf spinach, chopped

Here is how you make Mediterranean Lamb and Chick Pea Stew:

Makes two equal very large servings or three or four smaller ones. (Nutritional information is based on four servings.)1 In a saute or other skillet with deep sides and a lid, saute the lamb until cooked through. Set the lamb aside, drain thoroughly and wipe any fat out of the pan.2 SLOWLY saute the onions in the same pan on medium low or low heat until transparent. (Using low heat should allow you to avoid adding any oil to the pan!) Add the garlic in and saute for another minute.3 Add the chick peas, tomatoes, water and spices. Stir the lamb in.
