1 lb. ground beef, extra lean (93%/7%)
1 shallot, minced
3 cloves garlic, minced
1.5 tsp sea salt
1.5 tsp coarse ground black pepper
3 stalks heart of celery, chopped
2 bay leaves
2 carrots, circle-sliced, about 1/8" thick
1/2 cup fresh snow peas, in pod, cut into bite-size pieces
12 baby red potatoes, quartered
1 tbsp. reduced-sodium soy sauce
2 cups organic vegetable stock

Here is how you make Danielle's Whatever's in the Fridge Stew:

Heat large skillet over medium-high heat. Add 2 tbsp. olive oil, minced shallot and garlic. Saute 2-3 minutes until aroma released. Add ground beef. Sprinkle with salt and pepper. Saute beef until cooked through (no pink).Add celery, carrots, potatoes and peas. Stir to combine. Add soy sauce and vegetable stock. Stir to combine and reduce heat to low. Place bay leaves on top of meat and cover. Simmer covered for 15-20 minutes, or until potatoes are easy to pierce with a fork.
