Heat oil in large non-stick skillet or pot. Add onions, celery, carrots and potatoes, cook until onion softens. Add broth, mushrooms, worcestershire and water, bring to boil and add stewing beef. Cover and let simmer until beef is cooked through and potatoes are fork-tender. Season with pepper to taste.**you can make a slurry with cornstarch or flour and water to thicken the broth if necessary(potato starch should thicken the gravy).Makes 6 1 cup servings.
