Start by peeling potatoes. Quarter potatoes and then cut quarters into 1 inch pieces. Place in stock pot with 1 cup water. Turn stove on medium heat and allow the potatoes to cook while you prepare remaining ingredients. Peel carrots and chop into 1 inch pieces. Place in stock pot with potatoes. Peel onion and cut into quarters, then into 1 inch pieces. Place in stock pot with potatoes and carrots. Cut bell pepper into 1 inch pieces and place in stock pot. Cut smoked sausage into 1 inch pieces and place in stock pot. Chop cabbage into 1 inch pieces and place in stock pot. Place lid on pot and allow to steam. Stew should cook approximately 30 minutes total. Stew is ready when potatoes, carrots, and cabbage are soft. Stir together and serve.
