Chop up chicken breasts into bite-sized peices3. In a stir fry pan, saute chicken in about 2 tbsp of olive oil. Sprinkle with ground pepper and salt, as needed4. Once chicken is browned, move to outer rim of pan and make a "hole" in center.5. Drizzle some olive oil in center and add onion, carrots, broccoli and cauliflower6. Sprinkle with 3 or 4 pinches of the Southwest marinade7. Stir fry veggies until the color starts to come out (colors of veggies turn VERY bright)8. Drizzle additional olive oil to keep veggies from sticking9. Add corn and peas to the mixture, let simmer for 2-3 minutes10. Add about 2 tbsp of Lite (Low Sodium) Soy Sauce11. Stir veggies into Chicken12. Add 1 - 2 cups cooked rice13. Add additional 2 tbsp of Soy Sauce14.
