6 large green bell peppers
1 lb. Extra lean ground beef (96/4)
1 cup medium grain white rice (uncooked)
1 quart home-canned tomatoes (may use store bought)
1 jar prego tomato basil and garlic pasta sauce
1 cup shredded cheddar cheese
2 cloves minced garlic
1 tsp. dry Italian seasoning blend

Here is how you make Tracey's Italian stuffed bell peppers:

In a large frying pan. brown ground beef and garlic. Add Italian seasoning. Drain tomatoes, reserve liquid for later use. Add Tomatoes to beef mixture, breaking up any large chunks as you stir. Add rice and stir until any liquid is absorbed. Combine reserved tomato juice with water to make 4 cups total liquid. Start adding the tomato juice/water mixture a 1/2 cup at a time cooking and stirring until absorbed before adding next 1/2 cup. Continue until rice reaches al dente texture. Add 1/2 cup of pasta sauce and stir through. Remove mixture from heat. Cover tightly and let stand while you are preparing the peppers.This will allow it to thicken. Preheat oven to 400F.Cut tops off of peppers and remove seeds and core membranes.In a Large deep casserole or dutch oven (should be just big enough to stand the peppers snuggly) pour half of the remaining pasta sauce. Stand peppers in casserole dish and stuff with rice mixture. Pour remaining pasta sauce over the tops of the peppers and into the voids between. Bake for 30 -40 minutes or until peppers have acheived desired tenderness. Remove from oven and cover with cheese. Makes 6 servings.
