Brown, drain, and set aside ground beef. In large bowl mix ricotta, parmesan, and egg. Add garlic, parsley, and black pepper, roasted red peppers, along with 1/2 c spaghetti sauce and stir until well blended. Cover bottom of 9"X13" baking dish with thin layer of spaghetti sauce. Stuff each manicotti tube with cheese mixture and la in single layer in baking dish. Sprinkle ground beef evenly over manicotti. Top with remainder of spaghetti sauce. Cover tightly with foil and bake for approximately 50 minutes. Remove foil and top with mozzarella. Continue baking for about 10 minutes or until cheese has browned. Remove from oven and let stand for 15 minutes before serving.
