1.5 c. plain breadcrumbs
1 c. fat free shredded cheddar cheese, for stuffing
4 oz. chopped pimiento, for stuffing

Here is how you make Cheddar-Stuffed Meatloaf:

Makes 8 2-oz. servings.Mix all ingredients except for stuffing ingredients. pat out onto wax-paper covered sheet pan, making a rectangle as wide as your loaf pan. Layer stuffing ingredients, then roll up jelly-roll style, using the wax paper to help get started. Lay greased loaf pan upside down over loaf then flip the whole thing to get the meatloaf into the pan.
