Add 1 cup of long grain brown rice to 1 3/4 cups boiling water. Cover; reduce heat to low setting. Cook for approximately 50 minutes or until the liquid is gone and the rice is tender. Fluff with a fork when cooked.2. Crumble the ground beef and brown in a skillet. Drain all fat. Place meat in a strainer and rinse off any left over fat with hot water. Place back in the skillet with the chopped onion to continue browning. Season with salt and pepper to taste. Once the onions have become tender, add the kidney beans and brown rice. Add 1 1/2 cups of the plain tomato sauce. Season to taste with ground red pepper. Bring to a bubble and then simmer for 10 minutes. 3. Rinse bell peppers. Cut off top and stem. Clean out seeds and inner skin. Spoon in 1/2 cup of the beef mixture. 4. Sprinkle 1 tbsp. of the cheese on each of the bell peppers for garnish and taste.5.
