Cut tops off of peppers. Remove seeds, membranes, and stems. Chop onion. Preheat oven to 375 degrees. Put sausage and onions into a medium skillet. Bring a large pan of water to a boil. Immerse peppers and tops in boiling water for 3 minutes. Remove and set to drain on a paper towel. Once sausage is browned, add cream cheese.
