Put a silpat on a baking sheet (alternately, oil the baking sheet). In a large skillet, heat 1 tsp oil over medium-high heat. Add sausage and cook, breaking up meat with wooden spoon, until browned. Remove from pan and put into large bowl. Add 1 tsp oil to pan and cook onion, zucchini and garlic until tender, about 8 minutes. Add zucchini mixture to bowl, along with sausage, parmesan, rice and 1 tsp oil. Stir to combine, and season with salt and pepper. In a small bowl, combine the bread crumbs with ? tsp oil, and salt and pepper. Cut the pepper length-wise, and remove seeds and membranes. Fill each of the 8 halves with the rice mixture. Then top with the bread crumbs. Cook for 30 minutes, or until the crumbs are brown and the peppers are tender.
