4 bell peppers
1 tsp grapeseed or canola oil
1 medium onion, finely chopped
8 oz extra-lean ground beef
3/4 tsp dried thyme
1 large clove garlic, minced
3 medium tomatoes, seeded and diced
1 1/2 tsp dried basil
3/4 cup brown rice, cooked
3/4 cup quinoa, cooked
Worcestershire sauce to taste
salt & pepper to taste
cooking spray
4 tsp Parmesan cheese

Here is how you make Classic Stuffed Peppers:

If you have no cooked rice & quinoa, prepare these. Brown rice takes about 45 minutes to cook so time it accordingly. You may replace quinoa with 1/2 cup more rice if so desired.1. Preheat oven to 375 degrees. Place rack in upper-middle position.2. Cut peppers in half lengthwise. Scrape out the seeds and ribs, leaving the stem intact (peppers will not hold stuffing if you take stem off). Rinse any stuck seeds away and steam peppers for 10 minutes (I use a colander and a pasta pot with lid). Set aside.3. In a large non-stick frying pan heat canola oil until it starts to shimmer. Add onion, ground beef and thyme. Cook until the beef is beginning to brown, breaking up any clumps of meat that form. Add the minced garlic and stir until fragrant (30-60 seconds). Add the diced tomatoes & basil and stir. Add the cooked rice and cooked quinoa. Season with salt, pepper and Worcestershire sauce to taste (the Worcestershire should add complexity and not overwhelm). Remove from heat.4. Spray a shallow baking pan large enough for the peppers with cooking spray, lightly coating it. Line the peppers up in the pan, cut side up. Spoon the stuffing into the 8 pepper halves, equally distributing every last bit; mound it if you have to. Cover with foil and bake for 25 minutes.5. Remove foil and sprinkle the top of each pepper half with 1/2 tsp of grated Parmesan cheese.
