1 1/2 cups V8 Vegetable Juice, Low Sodium (divided)
1 cup Water
3 Tbsp No Salt Added Tomato paste
1/2 cup Whole Grain Jasmine Brown Rice
1/2 cup Quinoa
1/2 cup Bulgur Wheat with Soy
1/3 cup Israeli Whole Wheat Couscous


How Do I Make Grain Stuffed Peppers?

Here is how you make Grain Stuffed Peppers:

1. Heat oil in large saucepan over medium heat. Add onions and garlic cooking three minutes. Add rice stirring to coat for one minute. Add salt, pepper, 1 cup broth, 1 cup V8, water and tomato paste stirring well to dissolve tomato paste. Bring to boil, reduce heat to low, cover and simmer for 10 minutes. 2. Add other grains, stir, cover, and continue to cook for 15 minutes or until liquid is absorbed and grains are tender. 3. Preheat oven to 350. 4. Slice peppers in half and seed. Alternatively you can slice off tops and seed. Place peppers in covered dish and microwave for 4 - 5 minutes or until slightly softened. 5. Fill peppers with grain mixture packing tightly. Place in baking dish. Combine remaining 1 cup broth with 1/2 cup V8 and pour over peppers.
