Add chicken stock and can of tomatoes and cover with lid and reduce heat to low. Cook for 15-20 min until rice is tender (may be a little soupy still-that's okay!). Preheat oven to 400 degrees. Brown meat and drain off all grease and add can of rinsed black beans and turn to low to keep warm until rice is done. Then add to rice mix . Take casa-role dish and spread 1/2 meat mixture in the bottom moving rice away in 6 spots for the pepper to sit. Take remaining meat mixture and stuff already cut and seeded pepper until heaping. Place in casa-role dish. Take the tomato sauce and drizzle over entire dish (pepper and everything-so the rice won't dry out). Cover with tin foil and bake for 30 min or until desired tenderness of peppers. Sprinkle 3oz cheese and let set for 5 min covered with tin foil.
