Here is how you make Lean Stuffed Bell Peppers:

Pre heat oven to 400 Degrees.Combine cooked brown rice, lean ground beef, and eggs in a large bowl and knead with hands until mixed real good. Salt and Pepper to taste. I tend to use more garlic salt than listed. Cut tops of Bell peppers off and save. Clean out the membrane and seeds. Add Beef/rice mixture into the hollowed out bell peppers. Typically mix fills only 5 peppers. If you wish to fill more, add more rice. Replace tops of bell peppers.in a 9x 9 glass dish, put all 5 peppers and add about 1/2" to 3/4" of water and cover with aluminum foil. Cook for 1 hr.Used to make this during son's football practice which was about 2 hrs long.
