1 pound ground chorizo, browned
1 package Zatarain's New Orleans Style Jambalaya w/ Sausage Rice
1 mango, diced (about 1 cup)
1 medium tomato, diced
4 Tbsp cilantro, chopped
1 Tbsp lime juice
1/2 cup shredded cheddar cheese


How Do I Make Mango-Stuffed Peppers?

Here is how you make Mango-Stuffed Peppers:

Preheat oven to 350F. Brush olive oil on outsides of peppers and bake peppers 10 minutes. Brown chorizo and mix in jambalaya rice. Mix together mango, tomato, cilantro and lime juice. Stuff peppers with mango mix, half full. Fill the rest of peppers with chorizo mix. Sprinkle top with shredded cheese and add a spoonful of mango mix to top it off.
