6 Bell Peppers (I used 2 Red and 4 Green)
18 oz. 93% Lean Ground Beef
2 cups of no salt added Tomato Sauce
1/2 cup diced sweet onion
1/2 cup diced celery
1/2 cup chopped carrot
1 cup chopped red tomato
4 cloves of minced Garlic
1 TBSP Cumin
1 tsp. Coriander
1 tsp. Turmeric
1/4 tsp. crushed red pepper
1 tsp. Salt
1/2 tsp. black ground pepper
1 Package of 90 Second Uncle Ben's Rice (Whole Grain Medley Brown and Wild Rice
1 TBSP extra virgin olive oil


How Do I Make My Favorite Stuffed Peppers?

Here is how you make My Favorite Stuffed Peppers:

Preheat oven to 350 degrees.In a large Saucepan heat 1 TBSP of EVOO and once hot add onion, celery, carrots and garlic and saut? just until all the vegetables are soft and onion is clear. Then add the 2 cups of Tomato Sauce, salt and black ground pepper and heat for just a few minutes until the mixture is are warm. Then remove from heat.Divide Sauce mixture in half and add cumin, coriander, and turmeric tone half of the sauce mixture. Set aside and allow to cool.Then cut the tops off of the Peppers and set tops to the side' Remove seeds and ribs from inside the pepper and rinse to remove any that may be left behind. In the bottom of each Pepper poke 4 to 6 small holes with the end of a knife to create "drain holes for excess juices". If necessary cut bottoms slightly to allow peppers to stand up straight in baking dish.Heat 90 second rice according to package directions. Once heated add the rice and chopped tomato's to the sauce mixture half that the Cumin, Coriander and Turmeric were added. Add the Crushed red Pepper at this time too. Then add this mixture to the Ground Beef an mix all together well.In a 9" X 13" pan that has been sprayed with Cooking Oil Spray add just enough of the other half of the sauce mixture to cover the bottom slightly. then add 1/6th of the meat mixture to each Pepper and place them in the pan on top of the sauce. Once all are in the pan take the remaining sauce mixture and spoon onto the tops of each of the pepper and then place the top back on each of the peppers. Cover the peppers with a piece of Parchment Paper and then cover and seal pan with aluminum foil. Place in preheated oven to bake for 60 minutes. Then after 60 minutes remove foil and parchment paper and allow Peppers to cook 10 to 20 minutes longer to just brown the tops slightly.Serving Size: 6Number of Servings: 6Recipe submitted by SparkPeople user SOFIASOPAPILLA.
