My husband loves stuffed peppers but my old recipe called for white rice and lots of ground meat. I replaced the majority of rice with brown and wild rice, reduced the amount of meat and replaced it with shredded carrots and mushrooms. Less calories, less guilt and very tasty.

1 Box Zatarain's Wild and Brown Rice Mix
1/2 C. Uncle Bens Converted Rice
8 oz. lean ground beef
1 link hot italian sausage
5 red or green peppers
10 large mushrooms, chopped
1 carrots shredded
1/2 C chopped onions
3 cloves garlic
1 T olive oil
1 oz grated parmesan cheese
4 oz. part skim mozzarella cheese
12 oz. Bertolli Organic Olive Oil, Basil & Garlic Sauce

Here is how you make Stuffed Peppers - Jill's:

Prepare Zatarain's rice with the extra water for the white rice. After 20 of the 40 minutes cooking time, add the Uncle Bens rice, cook remaining 20 minutes. Set aside. Parboil cleaned peppers for about 5 minutes and cool quickly with cold water and set aside. In the meantime, saute chopped onions, in 1T olive oil. Add sausage and ground beef, saute until no longer pink. Add shredded carrots and mushrooms cook for about 5 more minutes. Add the cooked rice to the meat mixture along with 1 oz. grated parmesan. Mix thoroughly. Place the parboiled peppers in a shallow baking dish with a few tablespoons of sauce in the bottom of the dish to prevent sticking. Stuff each of the parboiled peppers with 1/5 of the mixture. Top with the tomato sauce and mozarella cheese. Bake @ 350 for 25 minutes to 30 minutes.
