8 oz. ground turkey, cooked and drained
8 oz. ground chuck, cooked and drained
3 red bell peppers, cut in half
1 tsp olive oil
1/2 cup onion, chopped
1 package chopped spinach (10 oz) - thawed and drained
1 can (8 oz) tomato sauce
1 can (14.5 oz) diced fire roasted tomatoes
1 can (15 oz) black beans, rinsed and drained
2 tsp. chili powder
1/2 cup part-skim Mozzarella cheese

Here is how you make Quinoa Stuffed Peppers:

Preheat oven to 350 degrees Fahrenheit.Bring 1 cup water to a boil in small saucepan. Add quinoa and reduce to a simmer. Cook about 10-15 minutes until water is absorbed. Set aside. Thaw spinach and drain. Squeeze excess fluid from spinach and set aside. Saute onion in 1 tsp oil oil and set aside.Cook ground turkey and ground chuck in non-stick skillet sprayed with non-stick cooking spray and drain. Add sauteed onion, tomatoes, tomato sauce, black beans, chili powder and drained spinach. Bring to a boil and simmer for 15 minutes. Add Quinoa.Remove tops from peppers. Cut in half and remove seeds. Spray 9X13 casserole dish with non-stick cooking spray. Place peppers in casserole dish. Fill peppers with quinoa, bean, spinach and meat mixture. Place extra mixture around peppers in dish. Sprinkle tops of peppers with cheese.Bake at 350 degrees Fahrenheit for 30-45 minutes until peppers are tender.
