Zucchini, 3 large sliced across, seeds removed (4 per zucchini)
Ground beef, extra lean, 1 lb.
Sweet Corn, from 4 cooked medium ears of corn
Basil, 25 leaves
Spinach, fresh, 1 package (10 oz)
Onion, 2 medium, diced
White Rice, cooked, 3 cups
Fresh Tomato (Medium, whole), 2
Scallions, raw, 4 medium
Fat Free Cottage Cheese, 1 cup
Fat Free Crumbled Feta, 4 oz.
Mozzarella Cheese, part skim milk, 12 oz


How Do I Make Stuffed Zucchini?

Here is how you make Stuffed Zucchini:

Cook 1.5 cups uncooked rice to make 3 cups of cooked rice. (1.5 cups rice with 3 cups water, bring to a boil, then put on low for 15 minutes).Preheat oven to 350 degrees.Slice each zucchini into 4 equal widths. Using a knife or spoon, scoop out the seeds (should be in the shape of an "O") and place in two 9 x 13 sprayed dishes.In a large skillet, brown the ground beef. Add the corn, onion, & basil and combine thoroughly. Slowly add in the spinach until wilted and mixed through. Fold in the cooked rice and tomato, getting everything to an even temperature. Remove from heat.Take the meat mixture and fold in the cottage cheese and feta cheese. Mix thoroughly so that each zucchini will get some of each ingredient. Using a knife or scissors, slice or cut the scallions into the dish and fold those in as well. Place equal amounts of the mixture in each zucchini.Sprinkle the mozzarella cheese evenly among the stuffed zucchini.
